HEALTHY CORNSTARCH ALFAJORES

Your tea deserves a delicious (and healthy) companion like these cornstarch alfajores.

Ingredientes

DRY INGREDIENTS
40g whole wheat flour.
130g cornstarch.
8g baking powder.
Zest of 1/2 large lemon.

WET INGREDIENTS
100g ghee or 100g regular butter.
3 egg yolks.
5g vanilla.

Preparación

Follow this step-by-step recipe:

1 – In a bowl, place the ghee or butter at room temperature, add the sweetener, and mix until well combined.
2 – Add the egg yolks and stir continuously.
3 – Add the vanilla essence and lemon zest.
4 – Once everything is well combined, gradually sift in the cornstarch, whole wheat flour, and baking powder. Knead until you form a crumbly dough that can be handled when pressed.
5 – Roll out the dough between two sheets of parchment paper to a thickness of 1.5 cm and refrigerate for 30 minutes (this step is very important).
6 – Cut the dough with round cutters and place the pieces on a baking tray lined with parchment paper, leaving space between them. Gather the leftover dough, form a ball, roll it out, and repeat the process.
7 – Preheat the oven to 180°C (356°F) and bake for 12 to 15 minutes until fully cooked but not browned.
8 – Remove the cookies from the oven and let them cool completely on a rack.
9 – Finally, fill them with dulce de leche and roll the edges in shredded coconut.
