THE BEST RED BERRY LOAF

Here’s the recipe for the BEST red berry loaf.

Ingredientes

DRY INGREDIENTS
150g oat flour.
10g baking powder.
60g walnuts.

WET INGREDIENTS
35g oil.
50g yogurt.
5g vanilla.
Zest of 1 lemon.
2 whole eggs.
1 egg white.
85g red berries.

TOPPING
55g plain cream cheese.
25g yogurt (you can use natural yogurt or a flavored one you like).
10g honey (optional) or a packet of sweetener.

Preparación

1 – In a blender, combine all the wet ingredients except the red berries.
2 – In a bowl, mix the dry ingredients. With the blender on low, gradually add the dry ingredients to the wet mixture.
3 – Once combined, turn off the blender, add the nuts, and transfer the mixture to a greased loaf pan.
4 – Preheat the oven to 175°C (347°F) and bake the loaf at 175°C for 26 to 30 minutes or until a knife inserted in the center comes out clean.
5 – For the topping: Mix the cream cheese, yogurt, and honey or sweetener of your choice.
6 – Spread the topping over the loaf and garnish with red berries.
